I’ve recently been seeing romanesco pop up on trendy food menus and have been eager to try cooking with it. I first tried it at Farmstand in Covent Garden where its available as a side veg on their seasonal menu. It’s similar to cauliflower and broccoli and tastes delicious! Its packed with vitamin A and K as well as other key vitamins and has lots of health benefits, such as helping lower cholesterol and blood sugar.
I recently got a romanesco for a farm shop in Surrey and made roasted romanesco with potatoes. Here is the easy recipe:
2 tbsp Salt
1-2 tbsp Turmeric
2 tbsp Ground cumin
1 tbsp Garam masala
2 tbsp Chilli powder
Wash and chop all the vegetables into small pieces. I used romanesco, tomatoes and potatoes but you can pretty much use any veggies you like. Mix the chopped veg with all the spices and oil (be generous with the spices). Sprinkle with sesame seeds and roast in the oven until golden brown. Easy peasy!
