Marrow Curry

I was given a huge marrow by a friend (interesting veggies clearly make the best presents for a foodie!) but I had no idea what to do with it. I love experimenting with new recipes and a good challenge so it was exciting to think of all the possibilities of what to make. Marrows belong to the same family as courgettes and can be cooked in similar ways.  Soups, salads, stuffed marrows – there’s so many options! But as with most vegetables I’m not sure what to do with, I made it into a hearty curry 🙂

Marrow

 

Ingredients

  • 1 white onion
  • A few cloves of chopped garlic
  • 1 tbsp turmeric
  • 1 tbsp chilli powder
  • 1 tbsp cumin
  • 1 tbsp salt
  • 1 tbsp mustard seeds
  • 1 tbsp garam masala
  • Oil
  • A big squeeze of lime
  • Coriander

Steps

  1. Chop the marrow into chunks. Chop the onions, garlic and tomatoes.
  2. First heat the oil then add the mustard seeds and cumin. Once it starts popping add the onions and let them cook until soft.
  3. Add the garlic and cook until brown.
  4. Add the tomatoes and stir.
  5. Add all of the spices and let the paste cook for 5-10 mins.
  6. Add the marrow chunks and stir/fold so all the chunks are covered with the paste.
  7. Let the curry cook on a low heat for 20-30mins.
  8. Add a big squeeze of lime and garnish with coriander.

 

You can re-use this recipe for most vegetables or any veggies you have no idea what to do with!
