Cacao, walnut and almond energy balls

These help fix my post lunch sweet craving (otherwise I’m reaching for biscuits or chocolate). They are a delicious sweet fix and a great energy booster. The main ingredients are nuts and dates so it’s all good for you! Energy balls have become very popular but are often expensive to regularly keep buying so why not make your own supply? It’s an easy peasy recipe and a great pick me up snack for the afternoon slump.

Ingredients

I’ve included the ingredient amounts as guidelines but I usually wing it by judging the look and consistency.

A handful of dates (6-8)
75g almonds
75g walnuts
2 tbsp coconut oil
2 tbsp cacao
2 tbsp chia seeds
1 tbsp of any nut butter (I like using Pip and Nut almond and coconut butter)

Add the nuts to a food processor and pulse until crushed into small pieces then add the dates, chia seeds, cocao, nut butter and coconut oil. Pulse again until the mixture is a smooth consistency that can be moulded into small balls. Roll the mixture in your hands to form small balls. You can also roll these in desiccated coconut or crushed nuts for their outer coating.  Place the balls in the fridge for a couple of hours so they set. The balls can then be kept at room temperature or in the fridge and last a few weeks.

Try experimenting with different types of nuts and nut butters. There are so many delicious flavour combinations you could try creating!
